Rice with Sausage and Vinaigrette

Sushi rice with Capistrano sausages, avocado and soy and ginger vinaigrette. Fresh and full of oriental flavour.

Ingredients
2 cups white rice (sushi rice).
3 cups water.
1 pack of CHICKEN AND PORK ADDED FRANKS Capistrano® sausages.
2 avocados.
2 scallions.
½ cup soy sauce.
¾ cup sesame oil.
1 cup vegetable or olive oil.
1 oz grated ginger.
3 tbsp lemon juice.
2 tbsp toasted sesame seeds.

Step by step
Step 1
Place the rice in a bowl, soak in hot water for 15 minutes, and then drain.
Step 2
In a pot, combine the rice and 3 cups of water. Cover and bring to a boil. Reduce heat to very low and cook for 15 minutes. Set aside.
Step 3
In a bowl, mix the soy sauce, lemon juice, and ginger. Using a whisk, slowly add the vegetable oil and ½ cup of sesame oil in a steady stream until well combined.
Step 4
Slice the Capistrano® sausages into julienne strips and thinly slice the scallions. Heat a skillet, add 1 tablespoon of sesame oil, and saute the sausages. Add the scallions. Once everything is cooked, remove from heat and set aside.

Step 5: In a deep plate or bowl, place the rice, garnish with half an avocado sliced into fan shapes, top with the sausage mixture, and sprinkle with toasted sesame seeds.
