Ingredients

  • 16 slices of Turkey Breast Capistrano®.
  • 12 egg whites.
  • ½ cup chopped white onion.
  • 3 tbsp chopped jalapeño (seeded and without membranes).
  • 2 cups diced tomatoes.
  • 23 ozs cooked green salsa.
  • 2 tbsp vegetable oil or olive oil.
  • ½ cup wáter.
  • Salt.
  • Black pepper.

Heat a skillet with olive oil. Saute the white onion and add a splash of water. Cook for 5 minutes.

Add the chopped jalapeño and saute with another splash of water. Once the liquid evaporates, cook for an additional 5 minutes over low heat.

Season with salt and pepper. Transfer to a plate or tray to cool. In a bowl, combine the eggs white with the sauteed mixture. Beat the mixture and season with salt and pepper.

Cook the egg white mixture in a skillet and set aside. Heat a skillet and grill the Turkey Breast Capistrano® slices.

Last steps

Step 5: Remove them from the skillet and fill with the Mexican-style egg whites to make rolls. Heat the green salsa in a pot or pan.

Step 6: Place 4 rolls on a plate and pour the hot green salsa over them.  Garnish with julienned red onion and a few cilantro leaves.  Enjoy!
