Ingredients
1 Pkg of PORK Chicharron Prensado Capistrano®.
10 oz of water.
5 tomatoes.
10 guajillo chiles.
1 piece of onion.
2 cloves of garlic.
A pinch of oregano.
1 bay leaf.
2 black peppercorns.
Corn tortillas.
Oil, as needed.
Salt to taste.

Step by step
Step 1
Fry the tomatoes in a pot. Add the onion, garlic, chiles, oregano, bay leaf, peppercorns, and water. Combine all ingredients and let it boil. Blend and set aside.
Step 2
Add the chicharron prensado to a large pot and fry for a few minutes.
Step 3
Add the blended mixture with a bit of water, using the same water you used to boil the ingredients if desired. Let it simmer for 5 minutes.
Step 4
Serve in moderate portions on tortillas to make tacos.
