  • 2 bread roll, halved.
  • Refried beans.
  • Oaxaca cheese Capistrano.
  • ½ cup of fresh pico de gallo.
  • 2 tbsp of chopped fresh cilantro.

Remove the casing and crumble the chorizo. In a 12-inch skillet over medium-high heat, cook the chorizo until it is well browned on all sides, stirring occasionally.

Preheat the oven to 450°F . Toast the bread. Spread the refried beans over the bread. Unwrap the Oaxaca cheese and cut it into strips to place on top of the refried beans. Bake in the oven for 5 minutes, until the cheese softens or melts.

To serve, place the chorizo on top of the cheese, followed by the pico de gallo on top of the chorizo.
