Prepare the Ham: Slice the ham into small pieces and saute in a skillet.

Prepare the Eggs: In a bowl, beat the eggs. Pour the beaten eggs into the skillet with the Capistrano ham. Season with salt and pepper. Reserve once the eggs are cooked.

Heat the Bean Sauce: Warm the bean sauce.

Prepare the Tortillas: In a skillet, heat enough vegetable oil and soften the corn tortillas.

Step 5: Assemble the Enchiladas: Fill the tortillas with the egg and ham mixture and roll them up.

Step 6: Bake:  Place the rolls in a heat-resistant glass dish.  Pour the bean sauce over the rolls, top with slices of Capistrano manchego cheese, and bake until the cheese is melted.

Step 7: Serve:  Serve 4 bean-enchiladas on a plate, accompanied by onion rings and fresh cilantro.
