  • 3 cups of shredded Capistrano® Oaxaca cheese.
  • 3 flour tortillas.
  • 3 tbsp of chopped cilantro.
  • 3 tbsp of chopped onion.

In a large skillet, heat the Capistrano® chorizo over medium-high heat for about 5 minutes or until it is browned.

Remove the Capistrano® chorizo from the skillet and place it on a paper towel to absorb any excess fat.

In another skillet, heat the flour tortilla until it puffs up. Once this happens, add some Capistrano® cheese and a portion of the Capistrano® chorizo.

Fold the tortilla in half and continue heating until it is golden brown and the Capistrano® cheese has melted.

Step 5: Add 1 tablespoon of cilantro and 1 tablespoon of onion to each quesadilla.
