Ingredients
5 oz of Capistrano® chorizo.
3 cups of shredded Capistrano® Oaxaca cheese.
3 flour tortillas.
3 tbsp of chopped cilantro.
3 tbsp of chopped onion.

Step by step
Step 1
In a large skillet, heat the Capistrano® chorizo over medium-high heat for about 5 minutes or until it is browned.
Step 2
Remove the Capistrano® chorizo from the skillet and place it on a paper towel to absorb any excess fat.
Step 3
In another skillet, heat the flour tortilla until it puffs up. Once this happens, add some Capistrano® cheese and a portion of the Capistrano® chorizo.
Step 4
Fold the tortilla in half and continue heating until it is golden brown and the Capistrano® cheese has melted.
