  • 5 Nopales
  • 2 cups of Capistrano® chorizo
  • Vegetable oil
  • 1 cup of onion
  • 3 medium tomatoes
  • Optional: serrano pepper
  • 1 pinch of cumin
  • Salt and pepper to taste

Step 1

In a large skillet, heat the oil over medium heat. Add the onion and cook, stirring, until soft (about 3 minutes).

Add the Capistrano® chorizo and continue cooking for about 8 or 9 minutes, stirring occasionally.

While the Capistrano® chorizo is cooking, place the tomatoes, serrano pepper, and 1 cup of water in a saucepan and cook over medium heat until the tomatoes and pepper are cooked.

Once cooked, pour the tomatoes and pepper into a blender with ¼ cup of the water and blend until you have a smooth sauce. Set aside.

Step 5: Once the chorizo is cooked, add the nopales and stir.

Step 6: Add the sauce and let it simmer for a few minutes to allow the flavors to blend.  Add more water if it becomes too dry.  Season with salt and pepper.  

Step 7: Finally, serve immediately with corn tortillas.
