- 1 cup Capistrano® chorizo.
- 1/2 cup finely chopped white onion.
- 1 tbsp. finely chopped garlic.
- 1/2 cup strips of poblano pepper.
- 3 cups shredded manchego cheese.
- Fresh cilantro to taste, finely chopped.
- Diced tomatoe.
- Flour tortillas to taste, for serving.

Step 1
Heat a skillet over medium heat add the onion and garlic.
Step 2
Add the Capistrano® chorizo and cook for about 5 minutes.
Step 3
Stir in the poblano strips and manchego cheese, cooking until the cheese melts.
Step 4
Pour into a slightly deep plate and add the previous mixture.
