1 cup Capistrano® chorizo.
1/2 cup finely chopped white onion.
1 tbsp. finely chopped garlic.
1/2 cup strips of poblano pepper.
3 cups shredded manchego cheese.
Fresh cilantro to taste, finely chopped.
Diced tomatoe.
Flour tortillas to taste, for serving.

Step 1
Heat a skillet over medium heat add the onion and garlic.
Step 2
Add the Capistrano® chorizo and cook for about 5 minutes.
Step 3
Stir in the poblano strips and manchego cheese, cooking until the cheese melts.
Step 4
Pour into a slightly deep plate and add the previous mixture.
