  • 1 cup Capistrano® chorizo.
  • 1/2 cup finely chopped white onion.
  • 1 tbsp. finely chopped garlic.
  • 1/2 cup strips of poblano pepper.
  • 3 cups shredded manchego cheese.
  • Fresh cilantro to taste, finely chopped.
  • Diced tomatoe.
  • Flour tortillas to taste, for serving.

Heat a skillet over medium heat add the onion and garlic.

Add the Capistrano® chorizo and cook for about 5 minutes.

Stir in the poblano strips and manchego cheese, cooking until the cheese melts.

Pour into a slightly deep plate and add the previous mixture.
