  • 17oz ground beef
  • 8oz Capistrano® chorizo, skinless and crumbled
  • ½ onion, finely chopped
  • 1 stalk of celery, finely chopped
  • 1 medium carrot, peeled and finely chopped
  • ½ cup breadcrumbs
  • 2 eggs
  • ¼ cup milk
  • ½ tsp salt
  • Ground pepper to taste
  • Chipotle powder to taste

Preheat the oven to 350°F. Grease a loaf pan and set aside.

Peel the potatoes, slice them thinly, and cook them in boiling salted water until tender. Drain and set aside.

n a skillet, cook the onion and garlic with the chorizo Capistrano® until golden. Add the ground beef and cook until well done. Drain excess fat.

Add the chicken broth, and spices, and let it simmer for a few minutes.
It's almost ready

Last steps

Step 5: Place a layer of potatoes at the bottom of the pan, followed by a layer of the meat mixture. Repeat until finishing with a layer of potatoes.  Sprinkle grated cheese on top.

Step 6: Bake for about 30-40 minutes or until the cheese is golden.  Serve hot and enjoy this delicious meatloaf.
