  • 14oz macaroni.
  • 5oz Capistrano® chorizo.
  • 8oz homemade tomato sauce
  • ½ onion.
  • 2 garlic cloves.
  • ½ tbsp. sweet paprika.
  • A pinch of dried oregano.
  • A pinch of pepper.
  • Salt to taste.

In a large pot, add 2 liters of water and bring it to a boil. Once the water is boiling, add the pasta and salt, cooking for the recommended time. Then, drain the pasta and set it aside.

While the pasta is cooking, prepare the rest of the ingredients.

Finely chop the onion and saute it in oil for 4 minutes.

Then add the minced garlic and the Capistrano® chorizo, and saute for another minute.
It's almost ready

Last steps

Step 5: Add the tomato sauce, oregano, paprika, and two tbsp. of the pasta cooking water. Cook on low heat for 5 minutes.

Step 6: Drain the pasta well and mix it with the tomato and chorizo sauce. Cover the pot and let it rest for a few minutes.
