  • 3 oz of Capistrano® chorizo.
  • 3 oz of shredded Capistrano® Oaxaca cheese.
  • A pinch of salt with onion poder.
  • A pinch of ground black pepper.
  • Oil.
  • 4 tbsp of finely chopped onion.
  • 1 cup of frozen poblano pepper strips.
  • Fresh parsley, washed and finely chopped (for garnish).

In a bowl, whisk the eggs with the salt, onion powder, and black pepper until well combined.

Heat a little oil in a skillet and pour in some of the egg mixture.
