Ingredients
8 eggs.
3 oz of Capistrano® chorizo.
3 oz of shredded Capistrano® Oaxaca cheese.
A pinch of salt with onion poder.
A pinch of ground black pepper.
Oil.
4 tbsp of finely chopped onion.
1 cup of frozen poblano pepper strips.
Fresh parsley, washed and finely chopped (for garnish).

Step 1
In a bowl, whisk the eggs with the salt, onion powder, and black pepper until well combined.
Step 2
Heat a little oil in a skillet and pour in some of the egg mixture.
Step 3
Cook for about 2 minutes over medium heat.
Step 4
In the center, add some Capistrano® chorizo, onion, poblano pepper strips and Capistrano® Oaxaca cheese.
