7 oz (about 200g) chorizo Capistrano (casings removed, crumbled)
4 large eggs
1 tablespoon oil (only if the chorizo doesn't render much fat)
Salt and pepper to taste

In a skillet over medium heat, cook the crumbled chorizo, stirring constantly until browned and the fat renders. If it's lean, add a tablespoon of oil.

Once the chorizo is cooked and slightly crispy, drain any excess fat if desired.

Beat the eggs in a separate bowl with salt and pepper.

Pour the beaten eggs over the chorizo in the skillet. Cook, stirring occasionally, until the eggs are cooked to your liking.
