Ingredients

  • 1 cup of Capistrano® chorizo
  • ½ cup of finely chopped onion
  • 1 tablespoon of finely chopped garlic
  • 2 tablespoons of finely chopped epazote
  • 2 cooked potatoes, diced
  • ¼ cup of cornstarch
  • 1 cup of egg
  • Vegetable oil
  • Salt and pepper to taste 

FOR THE SAUCE

  • 1 onion
  • 2 cloves of garlic
  • 8 tomatoes
  • Pepper to taste
  • 1 cup of chicken broth
  • ¼ cup of fresh cilantro
  • Salt to taste

Step 1

In a skillet over medium heat, cook the Capistrano® chorizo. Add the onion and garlic, cook for 3 more minutes, and then add the epazote. Remove from heat and let cool.

In a bowl, mash the cooked potatoes very well and mix in the Capistrano® chorizo, cornstarch, egg, salt, and pepper. Form patties using your hands.

Heat the oil in a skillet over medium heat and cook the patties until golden brown on both sides. Drain on paper towels and keep warm.

For the sauce, heat a tablespoon of vegetable oil in a pot and cook the onion with the garlic, tomatoes, and allspice until the vegetables soften. Add the chicken broth, bring to a boil, and cook for 10 minutes. Let it cool slightly.

Last steps

Step 5: Blend the previous mixture with the cilantro and salt.  Return to heat and cook for another 10 minutes or until thickened.

Step 6: Serve the patties with a layer of sauce and garnish with avocado and fresh cilantro.
