Ingredients
15oz Capistrano® chorizo.
Tortilla chips for chilaquiles.
3 tomatoes.
arbol chiles to taste
jalapeño pepper to taste
serrano peppers to taste
¼ whole onion.
¼ finely chopped onion (plus extra).
2 garlic cloves.
½ bunch of cilantro (plus extra).
¾ cup chicken broth.
Salt to taste.
Black pepper to taste.
Cumin to taste.
Oil.
Cream to taste.
10oz cotija cheese.

Step by step
Step 1
For the sauce: On a griddle, roast the chiles along with the onion, garlic, and tomatoes. Once they are nicely roasted, transfer everything to a blender and blend with cilantro, chicken broth, and seasonings to taste. You’ll get a perfect sauce. Set aside.
Step 2
In a skillet, add a splash of oil and the Capistrano® chorizo. Let it release its fat, then add the chopped onion; cook until the Capistrano® chorizo is well browned.
Step 3
Add the sauce and let it cook for about 10 minutes or until the sauce starts to reduce. Set aside.
Step 4
Place the tortilla chips in a deep pot and pour the sauce over them, mixing well but not letting them get too soggy; serve quickly.
