  • 15oz Capistrano® chorizo.
  • Tortilla chips for chilaquiles.
  • 3 tomatoes.
  • arbol chiles to taste
  • jalapeño pepper to taste
  • serrano peppers  to taste
  • ¼ whole onion.
  • ¼ finely chopped onion (plus extra).
  • 2 garlic cloves.
  • ½ bunch of cilantro (plus extra).
  • ¾ cup chicken broth.
  • Salt to taste.
  • Black pepper to taste.
  • Cumin to taste.
  • Oil.
  • Cream to taste.
  • 10oz cotija cheese.

For the sauce: On a griddle, roast the chiles along with the onion, garlic, and tomatoes. Once they are nicely roasted, transfer everything to a blender and blend with cilantro, chicken broth, and seasonings to taste. You’ll get a perfect sauce. Set aside.

In a skillet, add a splash of oil and the Capistrano® chorizo. Let it release its fat, then add the chopped onion; cook until the Capistrano® chorizo is well browned.

Add the sauce and let it cook for about 10 minutes or until the sauce starts to reduce. Set aside.

Place the tortilla chips in a deep pot and pour the sauce over them, mixing well but not letting them get too soggy; serve quickly.

Step 5: To serve, take a portion of the chilaquiles with Capistrano® chorizo and top with cream to taste, cheese, onion, and cilantro.
